Frozen Corn

I love corn on the cob but unfortunately it's nearly impossible to freeze or can. Totally do able but not nearly as good as it should be. I grabbed some corn and decided to freeze it becuase I just like it so much better then store bought frozen/canned corn.

Fill your largest pot approx 3/4 full of water... bring to a full rolling boil

in the mean time, prepare the corn by husking the corn and removing every piece of silk you can.

Blanch the corn (aka boil it) by placing the whole ear of corn in the boiling water begin blanching time between 4 and 6 minutes (start timing after the water returns to a full boil). This is important in that it kills the enzymes that, over time, break down and destroy nutrients and changes the color, flavor, and texture of food during frozen storage.


Cool the corn by placing in a large bowl filled with water and LOTS of ice. The idea is to allow to cool down at the same amount of time that you spent blanching it.

After the corn is cooled you can begin to cut the corn off of the cob

Then place in freezer bag, remove as much extra air as possible and tightly close before placing  in the freezer.

When you are ready to serve the corn it just take a few minutes to warm in the microwave or in a double boiler.

  1. I get so sad when corn on the cob isn't in season :-( But this is a great idea, and when it's that time of the year again I will def have to stock up and do this! Great idea!
